Basil Walnut Pesto and Basil Health Benefits

Basil is one of the over-looked herbs when it concerns health benefits.

There are many types of basil - sweet basil (Genovese basil), Thai basil, holy basil….to just name a few. They all contain similar vitamins and minerals that are necessary for healthy body function.

Basil is rich in vitamins K, A, and C. It’s also a good source of minerals such as magnesium and calcium. It contains antioxidants and anti-inflammatory properties; Consuming basil regularly can reduce the risk of cancers, heart disease and diabetes. Its antiseptic property aids in digestion and when applied topically, combats infection. It’s good for your skin too!

This basil walnut pesto recipe is easy to make and delicious tossed with pasta and spread on slices of crusty Italian bread. It can also be used as a sauce for meats and seafood. Pesto Sauce is traditionally made with pine nuts however, pine nuts are expensive and hard to fined sometimes. Walnuts work just as well and taste great!

🌱Basil Walnut Pesto ( Makes About 1 Cup)

- Fresh Basil Leaves 4 Cups

- Garlic 1-2 Cloves

- Olive Oil 1/2 Cup

-Grated Parmesan Cheese 1/4 Cup

-Walnuts 1/2 Cup

-Salt & Ground Pepper 1-2 Teaspoons

-Lemon Juice

In a food processor, mince garlic and walnuts. Add basil leaves and olive oil. Process until the ingredients are incorporated. Add parmesan cheese, salt, pepper and a squeeze of lemon juice. Mix well.

Note: Don’t over process basil leaves - doing so will cause oxidation and loss of flavor. Made too much? It can be kept in freezer for about a month. For a vegan recipe, omit parmesan cheese or substitute with vegan cheese.
